Tasting Italy: Paying homage to Chef de Cuisine Andrea Delzanno’s roots, Cucina presents a 4-course menu to take its guests on a gastronomic journey to Italy.
The team first stops in central Italy, charming its guests with the Tuscan classic Tuna Tartare, complemented with the refreshing flavors of croutons, ripe tomatoes, cucumber and onions in a vinaigrette dressing. Diners will then be introduced to Strozzapreti Norcina, a traditional and simple pasta dish from Norcia that flaunts the rich cream sauce, as well as black truffles and pork products that the town is known for. The rich pasta will then be followed by the Italian home dish Veal Tripe. Slow-cooked for 4 hours with spicy tomatoes, chickpeas and pecorino, this dish brings diners back to Chef Andrea’s childhood on his grandmother’s dining table. The journey comes to a pause at the last dish, Ricotta Cheese Tart, Chocolate Chunk, Vanilla Ice Cream, finishing the meal with a sweet touch.
