The Sano Green ($98) in particular is made with Half Crown gin, 5 green juice, fresh lemon juice, simple syrup, cardamom seed and peach bitter. A great pick for a sultry summer evening.

Apart from a stunning view from the other side – a must-see if you’ve still not been! – Red Sugar at Kerry Hotel is shaking up a few Absolut Vodka cocktails to help you beat the heat. The Calamansi Fizz ($98) with Cinnamon infused Absolut, honey, ginger, calamansi and soda, packs a bit of bite, but for those with a sweet tooth, the Midsummer Passion ($98) with Absolut, Midori and passionfruit sounds lovely.

Origin is definitely trying to win the award for the most photogenic summer cocktails in Hong Kong, especially with a new concoction inspired by Pantone’s colour of the year, as well as six other summer-hued Pantoned tipples. The mysterious Ultraviolet ($128) features lavender and berries slow-cooked Tanqueray gin, while the pastel green Creamy Apple ($128) is made with lemon slow-cooked Tanqueray gin balanced with fresh, sweet apple notes.

Nothing quite beats the fun tiki vibe at Honi Honi if you need a casual place for a big group to sip on cocktails. Happy hour goes from 4 to 7pm, and signature cocktails are only $58 a pop. Big groups should definitely try their new sharing (and flaming) rum punch, the Freaking Pineapple ($1000), served in a hollowed out pineapple, good for up to 8 people!

Tailoring their tipples for the health conscious this season, they have created two summer cocktails driven by detoxing ingredients, and a regular gin-infused cocktail. Come to the Dark Side ($148) gives the good old lemon-honey-ginger-water an alcoholic kick, and really, what’s better than spending the summer sipping on guilt-free detoxing cocktails? Gin lovers should try the Moringa, Forgive Me I Have Ginned ($148) featuring the new 2018 Superfood Moringa.
