What’s it called? Wow Charsiu
What’s it all about? Sheung Wan takeaway shop Wow Charsiu takes the traditional Hong Kong-style roast meat to the next level by combining Chinese and Western cooking techniques. Their char siu is first marinated in eighteen types of Chinese spices, roasted in over high heat to lock in the juices, then slow-cooked until the meat is moist and tender. Finally, the cooked char siu is roasted in high heat to caramelize the surface. The char siu comes in various flavors including the traditional honey-roasted (HK$54), and more modern options like yuzu (HK$58) and spicy (HK$58). Served in a Western-style Chinese takeout box, the char siu rice is stacked in four layers of char siu, rice, char siu and rice respectively — so you get the perfect mouthful of the two each bite.
