What’s it called? Kimchi Factory
What’s it all about? A brand new shop at Tsim Sha Tsui’s famous Korean Street (Kimberley Street) by New World Mart, Kimchi Factory offers more than 20 regional kimchi varieties, from the well-known varieties like fresh kimchi and mat kimchi (fermented in the fridge for at least three days), to harder-to-find varieties such as bok choy kimchi and yeolmu kimchi (turnip greens kimchi). Did you know kimchi is not just vegetables and paste? Look for nabak kimchi at the shop, which is a “water kimchi” made with radish and cabbage in a watery broth. Another must-try is the scallion kimchi, which is medium-sized scallions mixed with red pepper and fermented anchovies. It’s spicy with an intense flavor, making it a great pairing with rice.
