Contemporary French: Another day, another opening of a stylish French restaurant. This time, it’s Maison Eight, a restaurant and cocktail bar that’s as much about style as it is about substance.

Look & Feel: Not into sitting elbow to elbow with the next diner? You’re coming to the right place. Taking up an 8,000-square-foot penthouse space on Observatory Road, Maison Eight is divided into three sections. The restaurant side, dubbed Esmé, is the kind of place where you’d want to linger over a long lunch. The bar, Salvatore, is the brainchild of famed bartender Salvatore Calabrese. There’s also the Ballroom, a lounge that comes complete with its own terrace. Lastly, Maison Eight also house a Bollinger champagne room named Le Club 1829, decked out with vintage-inspired furnishings and a wine cellar. 

Meet the Chef: Executive chef Joe Chan has worked at the Mandarin Oriental Hotel Group and at the Renaissance Shanghai Putuo Hotel, while head of bar Fabien Marcault previously helmed Honi Honi Tiki Cocktail Lounge. 

On the Menu: Find contemporary classics like grilled beef salad, duck confit, and baked eggplant with tomato, olives and melted mozzarella. A lot of effort has obviously gone into the cocktail menu — there’s a complicated graph illustrating the ingredients, type of booze and what kind of glass the drink should be served in. While you’re there, digest an awesome views of the harbor while you sip on bubbles or tuck into a sumptuous meal.

Great For: Pre-dinner cocktails, fancy sit-down dinners, great views, impressive first dates.
