Japanese Fusion: Part Japanese, part modern European, Cima Fine Dining Bar in Wan Chai serves up fancy food and seriously creative cocktails.

Look & Feel: Across the 2,500-square-foot space, find loungey booths with a cream and beige palette. The pièce de résistance is the bar, which doubles as an aquarium filled with tropical fish.

On the Menu: There’s a creative streak here but it’s not terribly consistent: a dish like Cima Special Rolls ($250) – made with A4 Japanese beef, sea urchin, salmon roe and edible gold flakes – sounds pretty intriguing, while others such as roasted milk-fed baby lamb chop ($240) are playing it safe. Then there’s the “Eatail” cocktail menu from Japanese mixologist Katsuhisa Hirakawa San, which is pretty much what it sounds like: food-infused drinks.

Great for: Cocktails, splashy dinners, really hungry drinkers.

FYI: On a budget? You can definitely make a meal out of one of these cocktails.
