Shunde Spectacular: Joining the international and Western offerings at Hong Kong Ocean Park Marriott Hotel is Canton Bistro, which offers Cantonese and Shunde cuisine in chic, traditional-inspired surrounds.
Look & Feel: The interiors are warm and welcoming, taking inspiration from traditional Chinese and Hong Kong design and giving them a contemporary spin. Think wooden furniture with imperial teapots, ink paintings, and antique vases. Private and semi-private rooms are available, too.
On the Menu: Originating from a town in the Pearl River Delta of Southern China of the same name, Shunde cuisine showcases the quality of its ingredients with cooking techniques such as steaming, braising and stewing. River seafood features prominently. Canton Bistro also puts sustainability at the forefront, designing its dishes in accordance with the WWF-Hong Kong Seafood Guide. Expect classic favorites like har gau ($88) as well as more complex dishes such as braised catfish, pork belly, and bean curd skin, with onion and ginger ($238).
Meet the Chef: Executive chef You Jie-yi boasts plenty of experience in Chinese cuisine and the hospitality industry, combining traditional techniques with local palates in his dishes. The kitchen is overseen by chef You and executive chef Chow Fu-yap.
FYI: In addition to using sustainable cooking practices, the restaurant is also committed to eco-friendly practices across the board — offering biodegradable takeaway containers, for instance.
