Smells like gin, tastes like Christmas: Australian gin distillery Four Pillars is known for producing some of the most exquisite gin down under. But their Christmas Gin? That’s something special. Four Pillars’ head distiller Cameron Mackenzie, has fond memories of his mom, Wilma, making Christmas Pudding each year on Victoria Derby Day. Now, every year on Derby Day, Cam makes gin with Christmas puddings by putting them in the botanical basket of the still while he distils a batch of gin. He then blends this gin with a gin aged in 125-year-old whiskey barrels and adds a slight tweak of Rutherglen Muscat to finish. The result is Four Pillars Christmas Gin, a truly exquisite gin that smells like gin and tastes like Christmas. Each year, a different artist is commissioned to create a unique label, with this year’s label by Lucy Dyson featuring a rich work of college art, celebrating coming together with loved ones to share in the festive season.
