Mamma Mia: In the elegant surrounds inspired by 1950s Italian cinema, chef Paolo Olivieri has unleashed an exquisite tasting menu full of fresh Italian fare at SPIGA. It’s not fussy or fancy, but it is elegant and hearty. The five-course menu kicks off with a Hokkaido scallop carpaccio with carrot and ginger purée and Oscietra caviar and puffed fregola, then swiftly moves onto a decadent Piedmontese beef tenderloin tartare that’s been given a unique twist with a vitello tonnato sauce. For mains, diners will indulge in an “Acquerello” risotto, a staple in Milan, but here given a boost with saffron, jumbo asparagus, and edible flowers; then, move onto a slow-cooked New Zealand lamb loin—done to your specifications—and served with smoked eggplant purée, roasted artichokes, and mint salsa verde. The final touch? An earthy, delightful—and thankfully light—Cioccolato, featuring 27% dark chocolate panna cotta with pistachio sponge, almond praline crème, and yogurt sorbet. The whole meal can be enjoyed with a clever wine-pairing prepared by the restaurant’s sommelier.
