A Taste of the South: One of Hong Kong’s culinary stalwarts, Olé is revamping its taberna dining experience with a series of three exclusive menus that will take diners on a gastronomic journey through Spain’s diverse food regions. First up is Andalusia, the famed southern region whose dishes boast a hint of spice from its Moorish influences. Developed by Head Chef Antonio Martin and Group Chef Jesus Pascual, the menu offers plenty of dishes and flavors. Begin with five sharing plates, including the Salmorejo “Cold Tomato Soup” with Iberico Ham, Smoke Sardine Fillet with Summer Veggies and Toast, Deep Fried Adobo Garoupa Cubes with Oregano Aioli, White Mushrooms “Al Jerez,” and Chickpeas, Chorizo, and Pig Ears Stew. Then, enjoy your pick of mains – there are three on offer: Seville-style Beef Oxtail with Veggies and Potatoes, Rice with Mushrooms and Iberico Pork, and a Southern Spanish Seafood Stew. Finish your meal on a sweet note with the monastery-inspired Tocino de Cielo or the French Toast-like Torijas.
