Making a Scene: Acclaimed chef of two-Michelin-starred restaurant La Scène at the Prince de Galles and winner of Top Chef in France, Stephanie Le Quellec, is guest chef-ing it at Restaurant Petrus at Island Shangri-La Hong Kong between June 3-6. She’s created a series of compelling lunch and dinner menus and specials along with Restaurant Petrus chef Ricardo Chancton.
Highlights include the Langoustine From Brittany, a half-roasted, vanilla and buckwheat dressing, and langoustine blancmange; Veal Sweet Bread doused with bagna càuda sauce with white asparagus; and John Dory, a dugléré-style with fennel and zucchini in an orange blossom scent.
