So, You Say You Want a Revolution?: Samaira Rubina Coutinho Kavatkar – also known as The Bombay East Indian Girl – is the hottest name on the Hong Kong foodie scene right now, thanks to a wildly successful debut at Test Kitchen, which saw her four nights of progressive, flavorful culinary pop-ups sell-out within days. Now, she’s building on that success with another pop-up for Bastille Day – the anniversary of the French Revolution – to celebrate her innovative Indo-Portuguese haute cuisine. Expect decadent dishes like East Indian Lamb Potato Chop; East Indian Fish Kujit in Banana Leaf; and Bottle Masala Sous-Vide Chicken with Curried Leaf Spiced Tadka with Kuddi Sauce and Flavored Cumin Rice. The best part? All these flavorful dishes will be paired with carefully-chosen French wines – and the Les Miserables soundtrack – and perfectly finished with Masala Chai.
